I really want to get into tapestry crochet but I find it a little confusing and the one try I had was a disaster
do you have any YouTube/pattern/other recommendations that are great for a beginner to learn?

I’ve been dipping my hand into tapestry crochet recently as well. i recommend finding a simple pixel art, 2 colors should be good.to start. something like this
then comes the hardest part, actually making it lol
you chain however many squares the grid is across (i believe this one was 33) then you ch 1 extra for turning. you start with the square in the bottom right corner and crochet all the way across to the left. for color changes, when you stop using a color, just leave it be until it’s time to use it again like for the next row. the you can stretch the yarn across the back of your tapestry. it doesn’t look the neatesr, but it makes the front of the tapestry look neater (will look something like this)

I did tapestry crochet once, and I chose a design with about 5 colours! I definitely agree with @LoafOfBread , start with 2 colours!
