Organizers/baskets or wallets are pretty quick, if you feel like that’s something they might like.
The very first thing I ever crocheted was a queen size afghan, granny squares naturally, and gave that to my parents for Christmas. That was 43 years ago. Now I’ve been forbidden from crocheting, knitting, or yarn art of any kind gifting them ever again. I can still do beadwork or cross stitch or chainmaille jewelry for mom. But the truth is they’re at the age where they’re trying to empty their house so it’s not left to me and my son to slog thru.
However, making them anything is something they will treasure! So why not try for an ornament or two that can become part of the Christmas tradition?

The men in my life are TERRIBLE to gift things, because if it’s not usefull enough, they will not use it. They’ll smile and say thank you, and appreciate that I tried, but I know they think it’s useless and just takes up space…
So they’ll get cable binders this year, to tidy up the cable cabinet.
If I have enough time, I’m making some baskets for it too.
If they use coasters or placemats, those are always fun!
Beanie, scarf and/or gloves are fun if it gets really cold where you live.
But I think it all depends on how your parents are and what they’ll like I’m gifting my mom a keychain of a gummy bear because she thinks it to be so cute, and it’s the first amigurumi I made. It’s personal and she’ll love it, but she’ll love everything I’d make because she just loves that I’m able to make things
