Idk if this is wierd but im latinx and in my country there is a soup called pozole (po-zo-leh) made w porks head,(the whole thing im talking cheek, tounge, ear, the whole shebang) and maize using a bone broth usually and it has different flavours based off what you put in it, the flavours are distinguished by color. Green pozole is made with avocados, red pozole (my fave) is made sith peppers and spices, and white pozole is just straight broth. On top of the soup you can add lettuce/cabbage, radishes,cilantro. and onions
