Maybe try baby blankets or pillows( if you have a good attention span and know how to sew) or a stress ball. That is just inc and Dec, and sc all day!
Also do you know how to make a magic ring? That is important for amigurumi 
If you want to try other stitches when your more practiced, maybe try half double, which is just a sc with a yarn over, or wrap around, in the beginning and you do the sc the same, pulling through all three loops!

( Inc, sc) x 6
( Inc, 2 sc) x 6
( Inc, 3 sc) x 6
Sc all around for 5-7 rows ( see what’s good)
( Dec, 3 sc) x 6
(Dec, 2 sc) x 6
( Dec, 1 sc) x 6
6 Dec
