one thing you could do is make like chickens, sheep, and cows and make it look like your selling livestock

Its an outdoor festival where there are vendors that sell fantasy/historical items, entertainment like jousting and carnival ffod!

Have you been to this particular ren faire? You may have to gauge by the similar but different mind set. Similar themes, but in different forms is what I mean.
I would say have a range of stuff, but make sure you have you mythical creatures for sure. Also “garb accessories” like flower pins, fingerless gloves depending on weather, and head wear of different kinds and for some reason octopi and spiders were really popular at my local one last season.
