I’ve heard a lot of people buying jellyfish for such young children, because they like holding onto the tentacles etc. They usually work up pretty quick, too.
So maybe a jellyfish? There are multiple, but here are some free ones that were the first ones to pop into my search list (there are many in the shop, so I’m sure you could find one that you like).

Just make sure to make what you decide to make without safety eyes  They’re not recommended for children younger than 3 years.

Yes, I know about safety eyes for children 3 years and older. I do a bunch of markets and leave some without safety eyes. Thank you for the jellyfish! I didnt even think about that!

Maybe one of those blankets with a plush toy attached to it (security blanket?) would be good - one big square and a small toy shouldn’t take too long

Great  Just wanted to say it in case you didn’t know! I thought safety eyes were basically indestructible (I’ve broken two nails trying to get one off) until I decided to give my original pear-bear as a gift and needed to take them out–for some reason, those popped off immediately

Good luck with your gift!

I’ve heard jellyfishes are good with all the limbs for them to hold onto, I know people use this pattern to gift preemie babies so I’m sure it’s safe for one year olds too! It’s free and can be purchased if wanted
