Okay - lots of experimentation and I’ve settled on Fashion 3 by Red Heart/ Aunt Lydia.

All cotton, thin enough to make the flowers look fine and detailed, but wide enough to
Make it easy enough to crochet (found Aunt Lydia 10 way too fine for me.) I use a 2.5 mm book.
