I’ve seen several posted above that I’ve used at markets. Here’s a few more than shouldn’t take long
Honestly there’s a ton more 
but I pick things that I like regardless of if it’s popular. I’m an animal lover so I have birds, puppies, kittens and a TON of ocean creatures. I always try to make sure I have a enough gender neutral stuff because I feel like a lot of plushies tend to lean toward the feminine and I hate to see little brothers/boyfriends/whoever leave disappointed because everything is too “girly”. So I’ll make footballs (or baseball), aliens, monsters, dumpster fires, snakes, spider etc so that there’s a little something for everyone

I find that the small no-sew options I can sell cheap are the best movers, but I came up with the idea of a “Stuffie Adoption Center” that I tested for the first time at my last craft fair, and I basically sold out. I offered a free printed adoption certificate that they could fill out, and I offered some gabled boxes with rectangle windows cut out of the side as an upsell option- marketed as a carrier for their new pet. I put name tags on each of my creations with the animal’s name, personality, favorite color and food, and hobby. I added signs announcing the Adoption Center. Even the adults were fawning over the idea. I plan to expand on this idea by making collars, leashes, and little outfits for the critters as upsell items. I figure that Build-a-Bear doesn’t get rich selling $10 bears; it’s the $60 worth of accessories they sell you that make them a viable business.
