I make octopi for NICU babies when I get a chance.
This looks similar to what I do. I do not add eyes, nor do I use a pattern myself, sorry!

I’m not sure what type of yarn you have, but if you’re looking at acrylic, especially something a little rougher like Red Heart Super Saver, I can’t recommend crochet frisbees enough. I like to double or even triple strand them, and you can get some really cool color combinations that way! They’re great for adults or kids, and really fun to share. They make great additions to care packages, stockings, or an Operation Shoebox type box. Here’s a few I’ve made and a pattern that’s pretty similar to what I do.
If you have softer/natural fiber yarn, hats and beanies for cancer patients or newborns heading home from the hospital are a great option as well. 
There are some national and even global organizations out there you can ship to, or you can try contacting your local hospital or cancer support group to see if they accept them.
