And I have 20 plushies but I want 80 or more…..

Any advice is welcome 
People come looking for something specific sometimes so make a variety. Our farm animals sell well. We currently have a wall of sea creatures. And a side with most of my bigger things. I test for Dreamweave so I’ve got a bunch of those which sell but slower because they are a bit more expensive. Also there’s a table with snugglers and baby blankets.
My dragons sell well. There is an adopt a dragon bin. Usually either sells out or at least sells most. Minis sell well too. Kids will use their allowance or beg parents but we also sold an anchor octopus to a kid for $60 who was using her allowance.
You’ll want a few bags for people buying gifts. You can get paper gift bags in a plain color at Walmart for a reasonable cost.
Basically if you or someone you love likes it it will probably do well. And if it doesn’t sell, you have more for the next market.

i would suggest focusing on things that are quick and sell well, and if you have more time then focus on large/medium plushies then. good luck with the market/pop-up!
I’m doing it with her, I’ve made a few plushies from my own patterns but yeah keychains sell well we sold out last time basically
