Ingredients
1/4 cup cornstarch
1/4 teaspoon salt
2/3 cup sugar
2 cups whole milk
1 ounce butter at room temperature
1/2 teaspoon vanilla
Directions
1.In a bowl, combine the cornstarch, salt and sugar, and stir in 1 cup of the milk to make a smooth paste.
2. In a medium saucepan, heat the remaining cup of milk over medium heat until bubbles form on the edge, about 1 minute.
3. Add the cornstarch mixture and stir constantly with a wire whisk until it boils and thickens.
4. Spoon the pudding into the top of a double boiler and place it over boiling water. Cover and cook until thickened, stirring occasionally, about 10 minutes. Remove from the heat, stir in the butter and vanilla and pour into a bowl.
5. Let the mixture cool.
