Idk how old you are, He Who fights with Monsters isn’t exactly adult but it does have some adult themes to it. If you’re younger I HIGHLY recommend reading Awaken Online. It is incredibly good and probably one of my all time favorites.
As for Manga, if you like Shoujo Kyo Koi Wo Hajimematsu is very sweet. But you mentioned Assassination Class Room. Zatch Bell is a good one I enjoyed growing up, Great Teacher Onizuka is a VERY good choice! If it’s the humor that you like about Assassination Classroom but not necessarily the classroom setting then I can’t recommend Gintama enough. Nozoki Ana is another good one.
The Tokyo MewMew manga is better than the show imo, it isn’t nearly as childish, the art is better, and it expands a bit more into the world of magical girls are a thing you like.
